Sun-Dried Tomato Hummus

Ingredients

  • 1 can chickpeas (garbanzo beans), drained and rinsed, BPA free and organic if possible 15 oz
  • 2 garlic cloves
  • 1/4 cup lemon juice
  • 3 tablespoon tahini sesame seed butter
  • 1/4 cup sun-dried tomatoes packed in olive oil drained with olive oil reserved
  • 1-2 tablespoon olive oil from reserved oil of sun-dried tomatoes add additional olive oil as needed for desired consistency
  • 1 tsp. salt
  • 1/8 tsp. paprika
  • 1/2 tsp. ground cumin

Instructions

  • Combine all ingredients in a food processor or high speed blender. Process until all ingredients are combined and smooth.
  • Transfer hummus to a small serving bowl and top with additional olive oil (if desired) and sundried tomatoes. Serve room temperature or chilled with veggies, crackers and/or chips. Also, makes a delicious spread for wraps and sandwiches.

Notes

Top the bowl with more tomatoes before serving.
