1canchickpeas (garbanzo beans), drained and rinsed, BPA free and organic if possible15 oz
2garlic cloves
1/4cuplemon juice
3tablespoontahinisesame seed butter
1/4cupsun-dried tomatoes packed in olive oildrained with olive oil reserved
1-2tablespoonolive oil from reserved oil of sun-dried tomatoesadd additional olive oil as needed for desired consistency
1tsp.salt
1/8tsp.paprika
1/2tsp.ground cumin
Instructions
Combine all ingredients in a food processor or high speed blender. Process until all ingredients are combined and smooth.
Transfer hummus to a small serving bowl and top with additional olive oil (if desired) and sundried tomatoes. Serve room temperature or chilled with veggies, crackers and/or chips. Also, makes a delicious spread for wraps and sandwiches.
