Ingredients

For the crepes:

  • 1 cup liquid egg whites about 8 egg whites
  • 1 scoop whey protein powder chocolate flavor (about 30 grams)

For the filling:

  • 1 cup reduced fat plain Greek yogurt*
  • 1/2 teaspoon pure vanilla extract
  • Stevia to taste; optional
  • 1 cup sliced strawberries
  • 1 cup fresh blueberries Or more strawberries, if that's what you have on-hand, like me.

Instructions

  • Combine egg whites and protein powder in a medium bowl; mix well.
  • Heat a small nonstick skillet (or omelet pan), lightly coated with spray, on medium-high heat.
  • Spoon about 1/4 cup batter into skillet; cook for 1 to 2 minutes, or until bubbles form on top. Flip with spatula and cook for 30 seconds more.
  • Repeat with remaining batter to make four crepes. Set aside.
  • Combine yogurt, vanilla and Stevia (if desired) in a small bowl; mix well.
  • Fill crepes evenly with yogurt mixture, strawberries and blueberries.

Notes

*I also enjoy using Chobani Simply 100 flavored yogurts and if using, omit the vanilla and Stevia.
*Recipe from FIXATE. If following 21 Day Fix, 1 crepe with filling equals 1/2 red and 1/2 purple.
