A quick and easy Chocolate Chip Cookie Microwave Mug Cake that can be yours in less than 5 minutes, from start to finish and tastes just like a chocolate chip cookie.

baking powder

+ 2 teaspoons unsweetened vanilla almond milk

maple syrup

vanilla extract

teaspoon
butter extract

mini chocolate chips

Spray a microwavable mug with cooking spray and then mix together oat flour, baking powder, salt, milk, maple syrup, vanilla and butter extract (if using). The batter should be somewhat thick, but not dry. Add 1 to 2 teaspoons more of almond milk as needed for consistency. Stir in mini chocolate chips and sprinkle a few over the top, if desired.

Microwave on high for about 1 minute and 25 seconds. Take out of the microwave and if desired transfer to a plate. Enjoy!
*To make oat flour simple grind oats in a blender or food processor until oats become a fine powder. Alternatively, oat flour is sold in the health food section of your grocery store. Bob's Red Mill is a great brand. Other flours will also work or try Kodiak Cakes pancake mix.
**Butter extract helps to add more of a cookie taste to your mug cake. It can be found near the spices and extracts of the baking aisle at your grocery store and is also great added to oatmeal.
