If you think oatmeal is boring, this Peanut Butter & Jelly Overnight Oatmeal is guaranteed to make you see the breakfast favorite in a whole new light!
⅓cupold-fashioned rolled oatsgluten free, if needed
⅓cupplain nonfat Greek yogurt*
⅓cupunsweetened vanilla almond milk**
1tablespoonchia seeds
2teaspoonspeanutor almond butter
1tablespoondouble berry chia seed jam or other favorite jam
1-2packetsstevia or 1 teaspoon honeyoptional for sweetener
¼cupblueberries for topping
Instructions
In a jar or bowl with lid, combine oats, yogurt, almond milk and chia seeds, mixing well.
Cover tightly with a lid or plastic wrap and refrigerate overnight.
In the morning or at least 4 hours later, add a splash of milk, top with peanut butter (or other nut butter), jam and fresh blueberries (or any fruit of your choice) and enjoy! Add sweetener of choice.
Notes
*For non-dairy vegan oats, substitute with mashed banana or applesauce. **Any milk product works.
