This recipe for Roasted Barramundi with Blueberry Salsa is quick and easy to make, full of healthy and antioxidant- rich ingredients, naturally-gluten free, and it's perfectly sweet and savory and delicious!
frozen fillets Australis Barramundi
The Better Fish®*
about 6oz. or 1 half-pint blueberries, bigger ones chopped in half
seeded and minced
chopped fresh cilantro leaves
optional for serving
Preheat oven to 425 degrees F.
Place frozen fillets on baking sheet.
Cook for 20-22 minutes, or until fish flakes easily.
While fish is cooking, toss all Blueberry Salsa ingredients together in a medium bowl.
Once fish is cooked, serve over about 1/2 cup mixed greens and top with 1/4 of the blueberry salsa mixture.
*I used the lemon herb butter variety.
