Ingredients

  • 4 frozen fillets Australis Barramundi The Better Fish®*
  • 1 1/4 cups blueberries, bigger ones chopped in half about 6oz. or 1 half-pint
  • 1/2 cup chopped cucumber
  • 1 cup corn**
  • 1/2 jalapeno seeded and minced
  • 1/4 teaspoon lime zest
  • 1 1/2 teaspoon lime juice
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 cups mixed greens optional for serving

Instructions

  • Preheat oven to 425 degrees F.
  • Place frozen fillets on baking sheet.
  • Cook for 20-22 minutes, or until fish flakes easily.
  • While fish is cooking, toss all Blueberry Salsa ingredients together in a medium bowl.
  • Once fish is cooked, serve over about 1/2 cup mixed greens and top with 1/4 of the blueberry salsa mixture.

Notes

*I used the lemon herb butter variety.
**I used a frozen roasted corn variety and defrosted before using.
