Ingredients

  • 1/2 cup peanut butter almond butter or other favorite nut/seed butter
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1/4 cup molasses
  • 3/4 cup quick oats
  • 1/4 cup almond milk or other favorite milk product
  • 1 1/2 teaspoons ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chips + 2 tablespoons more for topping I used Enjoy Life Foods Dark Chocolate Morsels

Instructions

  • Preheat oven to 375 degrees F. and prepare a muffin baking pan with cooking spray or 9 muffin liners.
  • Add all ingredients (except chocolate chips) to a high-speed blender and blend on high until batter is smooth. Stir in chocolate chips.
  • Evenly spoon batter into 8 muffin cups. Sprinkle additional chocolate chips on top, if desired. Bake for about 15 mins at 375 F. degrees. Cool muffins for about 10 minutes before removing from baking pan. Store in an air-tight container for up to a week. If leftover more than 2 days, it's best to store in the fridge.

Notes

Use any type of chocolate chip you like. I like to hold some back for pressing into the top of the muffin to make them look amazing.
