Flourless Strawberry Oatmeal Waffles

Ingredients

  • 1 1/2 cup rolled oats or 1 1/4 cup quick oats gluten-free as needed
  • 1/4 cup cornstarch
  • 1 tablespoon coconut palm sugar granulated sugar will also work
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 container So Delicious strawberry, vanilla or plain yogurt (about 1/2 cup) 5.3 oz
  • 1/4 cup So Delicious unsweetened vanilla almond milk or other nondairy milk
  • 2 large eggs
  • 1 tablespoon melted coconut or olive oil
  • 1 teaspoon vanilla extract
  • 1/2 cup halved strawberries*
  • Toppins as desired*

Instructions

  • Preheat waffle iron.
  • Add all the ingredients to a blender and process on high until smooth.
  • Spray waffle iron with cooking spray and pour about 1/2 cup batter per waffle, and depending on size of waffle iron, into waffle iron. Batter will be thick, so smooth out slightly with the back of a spoon. Cook until waffles are crisp and golden brown, repeat with remaining batter.
  • Serve waffles warm with your favorite toppings. Waffles can also be stored in the freezer for a quick breakfast option. Just reheat them in the toaster when you're ready to eat.

Notes

*If you don't have strawberries on hand, this recipe will work without them, you may just need to increase the milk by about 2 tablespoons.
Optional for topping: chocolate chips, fresh fruit, pancake syrup, nut butter, and/or So Delicious coconut coco whip
