Ingredients

  • ½ cup 1-to-1 gluten-free baking flour* (spoon in measuring cup and level off with knife) 75g
  • 2 teaspoons baking powder
  • 1 tablespoon cocoa powder
  • 2 teaspoons coconut sugar**
  • ¼ teaspoon salt
  • 2 eggs
  • 1 container Greek or other yogurt 5.3 oz.
  • 1 1/2 cups of your favorite flavor Halo Top Ice Cream

Instructions

  • Heat griddle or large skillet over medium heat. Spray with a nonstick cooking spray or grease with coconut oil.
  • Combine flour, baking powder, cocoa, sugar and salt in a medium mixing bowl.
  • In a small mixing bowl, combine eggs and yogurt.
  • Add egg mixture into flour mixture and whisk until blended.
  • Use a ¼ measuring cup to measure out batter for each pancake and cook for about 3-5 mins on each side. They should be golden brown on each side.
  • Enjoy with a serving of your favorite flavor of Halo Top Ice Cream spread between two pancakes.

Notes

*I use Bob's Red Mill 1-to-1 Gluten-Free Baking Flour. Any all-purpose flour will work.
