Ingredients

  • 5 slices Smithfield Hometown Original Bacon or other favorite Smithfield Bacon
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • ¾ cup bread crumbs*
  • 1/2 cup shredded Parmesan cheese or other favorite cheese
  • 2 tablespoons chopped fresh basil or parsley + more for garnish
  • Salt and pepper, to taste
  • 24 2-inch crimini or white mushrooms remove stems and hollow out a cavity

Instructions

  • Preheat oven to 400 degrees F. Place bacon on a rack over a baking sheet and bake for 15 to 20 minutes or until crisp. It will get crispier as it cools. Once cooked, dice and transfer to mixing bowl with other ingredients.
  • While bacon is cooking, sauté onion for about 5 mins, add garlic and sauté for an additional 2 minutes. Stir in spinach; cook just until wilted. Transfer into mixing bowl with bacon; allow to cool slightly.
  • Stir in bread crumbs, cheese and basil or parsley. Season with salt and pepper.
  • Place mushrooms on baking sheet. Spoon into each one bacon/bread crumb mixture. Bake at 400 degrees F. for 15-20 minutes. Serve warm from the oven. Enjoy!
