Ingredients

  • 5 oz. chicken breast, cooked and shredded*
  • 2 cups chopped kale or other favorite green
  • 1 chopped apple or pear
  • 2 tablespoons chopped almonds or other favorite nut

For the dressing:

  • 2 tablespoons (about 1/2 of a small avocado) mashed avocado
  • 2 tablespoons nonfat, plain Greek or regular yogurt
  • 1 teaspoon apple cider vinegar
  • salt & pepper to taste

Optional for serving:

  • Bread, wraps, tortillas, crackers

Instructions

  • Combine all salad ingredients together in a large bowl. 
  • Stir dressing ingredients together in a small bowl. Pour dressing over salad ingredients and toss to combine.
  • Serve as a sandwich with bread, in a wrap or simply in a bowl as a salad. Enjoy!

Notes

*I use canned chicken.
**This recipe works great as a make-ahead meal and keeps well in the fridge for several days.
