Autumn Kale Chicken Salad features apple, avocado and almonds in this delicious fall salad recipe. Serve this easy salad in a wrap for a yummy lunch!

- 5 oz. chicken breast, cooked and shredded*
- 2 cups chopped kale or other favorite green
- 1 chopped apple or pear
- 2 tablespoons chopped almonds or other favorite nut
For the dressing:
- 2 tablespoons (about 1/2 of a small avocado) mashed avocado
- 2 tablespoons nonfat, plain Greek or regular yogurt
- 1 teaspoon apple cider vinegar
- salt & pepper to taste
Optional for serving:
- Bread, wraps, tortillas, crackers
Combine all salad ingredients together in a large bowl.
Stir dressing ingredients together in a small bowl. Pour dressing over salad ingredients and toss to combine.
Serve as a sandwich with bread, in a wrap or simply in a bowl as a salad. Enjoy!
*I use canned chicken.
**This recipe works great as a make-ahead meal and keeps well in the fridge for several days.
