Ingredients

  • 1 egg or 2 additional egg whites
  • 2 egg whites or 1 additional whole egg*
  • 2 tablespoons unsweetened almond milk or low fat milk of choice
  • Pinch of salt & pepper, to taste
  • 2 tablespoons diced red pepper, tomato or salsa
  • 2 tablespoons shredded cheese of choice
  • 2 tablespoons Smithfield Anytime Favorites diced ham
  • 5 spinach leaves, chopped

Instructions

  • Spray a microwave safe mug with cooking spray. Beat together eggs, milk, and stir in additional ingredients, in the mug.
  • Microwave for about 2 minutes and until egg is set.

Notes

*If using carton egg whites, this will be 1/4 cup.
