Healthy Berry Ice Cream Pops

Easy, 3-ingredient Berry Ice Cream Pops with creamy Low Cow ice cream and sweet berry goodness! Perfectly sweet, and ideal for summer!

Ingredients

  • 2 pints Simple Truth Low Cow Lite Ice Cream softened (any flavor)
  • 2 cups fresh or frozen berries puréed (I used a combination of strawberries and blueberries)
  • 1/2 cup granola or crushed cookie (optional)
  • 6 Small paper cups
  • 6 Wooden popsicle sticks

Instructions

  • Let the ice cream soften.
  • While it softens, purée fruit in a blender (another option is to use diced berries, if you don't have a blender on hand).
  • Divide the puréed berries evenly to the bottom of cups. Divide the softened ice cream into each cup and on top of berries. Reserve half of the puréed berries for a layered look.
  • Top each cup with granola. (for a layered pop, first top with reserved puréed berries and then with granola)
  • Stick a popsicle stick in the center.
  • Put the cups on a tray and place in the freezer. Freeze 2-3 hours, or until set.
  • To eat, simply pull the paper cup off and enjoy.

Notes

*The granola may also be placed first in the cup or layered in the ice cream. There's really no wrong way to assemble!
*1 pint of ice cream will make 3 pops.
