2pintsSimple Truth Low Cow Lite Ice Creamsoftened (any flavor)
2cupsfresh or frozen berriespuréed (I used a combination of strawberries and blueberries)
1/2cupgranola or crushed cookie(optional)
6Small paper cups
6Wooden popsicle sticks
Instructions
Let the ice cream soften.
While it softens, purée fruit in a blender (another option is to use diced berries, if you don't have a blender on hand).
Divide the puréed berries evenly to the bottom of cups. Divide the softened ice cream into each cup and on top of berries. Reserve half of the puréed berries for a layered look.
Top each cup with granola. (for a layered pop, first top with reserved puréed berries and then with granola)
Stick a popsicle stick in the center.
Put the cups on a tray and place in the freezer. Freeze 2-3 hours, or until set.
To eat, simply pull the paper cup off and enjoy.
Notes
*The granola may also be placed first in the cup or layered in the ice cream. There's really no wrong way to assemble!*1 pint of ice cream will make 3 pops.
