Ingredients

  • 1 tablespoon avocado or olive oil
  • 1 small white onion chopped
  • 1 red bell pepper seeded and chopped
  • 3 cups cooked rice (I used Minute® Ready to Serve White Rice Family Bowl)
  • 1-2 cups cooked chicken*
  • 1 cup pineapple tidbits drained or fresh pineapple cut into small pieces
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce or coconut aminos more or less to taste
  • 2 green onions sliced into rings
  • red pepper flakes and fresh cilantro to garnish optional

Instructions

  • Preheat oil in a large skillet or wok to medium heat. Add onion and red bell pepper and sauté until tender.
  • Add the rice, chicken and pineapple to the veggie mixture. Pour the soy sauce and sesame oil on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions and, if desired, also sprinkle on red pepper flakes and fresh cilantro. Taste and add more soy sauce and/or salt and pepper as needed.
  • Serve the meal inside a hollowed out pineapple for extra flair!

Notes

*Use leftover chicken, canned chicken (drained) or rotisserie chicken
