Southwest Chicken Salad Wraps- protein-packed chicken joined with chopped romaine, black beans, bell pepper, olives, sweet yellow corn, fresh tomatoes, avocado and a kick of salsa makes for the most incredibly tasty, easy dinners!
1can sweet yellow corndrained (or 1 cup frozen corn, thawed)
2roma tomatoesdiced
1heart of romaine lettucechopped well
¼cupcilantro,chopped
1large ripe avocadodiced
For the dressing:
⅓cupmayoor use plain Greek yogurt
2/3cupPace® Chunky Salsa
For serving:
tortilla wraps or large lettuce leaves/cups
Crackers/chips

Instructions
In a large bowl, combine all salad ingredients together.
In a small bowl stir dressing ingredients together.
Pour dressing over salad, gradually, as you toss to combine, then gradually add more dressing until salad is coated in dressing. Add salt to taste, if needed.
Serve with a large glass of V8+Energy®! Add salad to a tortilla wrap or large lettuce leave, over greens or dip style with crackers or chips. Enjoy!

Serve in whatever wrap fits your diet. You can also dip crackers or cut veggies into the salad.
