Ingredients

For the dressing

  • 1/4 cup reserved bacon grease or olive or avocado oil
  • 4 strawberries
  • 1 tablespoon cider vinegar

For the salad

  • 8 cups mixed greens chopped (I used romaine)
  • 6 hard boiled eggs quartered
  • 4 slices cooked bacon crumbled
  • 1/2 cup strawberries hulled and sliced
  • 1 avocado peeled, seeded and sliced or diced
  • 1/4 cup raw pistachios or other favorite nut
  • 1/4 red onion diced

Instructions

For the dressing:

  • Combine all ingredients in a blender and blend until smooth.

To assemble:

  • Serve greens with the toppings either in rows on top or in bowls on the side, allowing each individual to pick what they want.

Notes

The best part about cobb salad is the beautiful presentation of all the different ingredients!
