Ingredients

  • 1 pound regular or Italian sausage (Jennie-O Italian Style Turkey Sausage is my go-to for this recipe)
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons cornstarch
  • 1 (15 oz.) can fire roasted diced tomatoes
  • 1 cup freshly grated parmesan cheese
  • 1 cup fresh basil, snipped into little pieces
  • 1/2 pound dry spaghetti (or your favorite pasta)

Instructions

  • In a large pot over medium to high heat, cook sausage and onion together, stirring often, until onion is soft, sausage is crumbled and browned and cooked all the way through. Add the minced garlic, and cook on low for only a minute or two. (Garlic burns easily!)
  • In a glass measuring cup, mix the cornstarch with the broth until completely dissolved, then add the broth mixture to the skillet with the sausage. Cook on medium-high heat, stirring often, for a few minutes until sauce has thickened. Then, add the can of tomatoes and stir to combine.
  • Add the grated Parmesan, and the chopped basil to the sauce and stir to incorporate all ingredients.
  • While cooking sausage, boil water for pasta in a large pot. When it comes to a boil, add a generous pinch of salt and add your pasta to the water. Stir and when pasta is al dente, turn off the heat and drain most of the water.
  • Add the pasta to the pot with the cooked sauce. Mix together, then garnish with more basil and parmesan cheese. Serve warm. Enjoy!

Notes

Once prepared, this sausage pasta dish will keep in the fridge for about 5 days. To reheat the pasta, add it to the stove with a splash of olive oil or broth and heat until warm.
