Low Fat Flourless Banana Bread

Ingredients

  • 1 1/2 cups old fashioned rolled oats*
  • 1/2 cup protein powder, vanilla or plain (or additional oats)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup Xylitol, like Swerve or XyloSweet, or other sweetener that measures like sugar
  • 1/2 teaspoon cinnamon
  • 4 egg whites
  • 1 teaspoon white vinegar
  • 1 1/2 cups ripe mashed bananas, about 3 large
  • 1/2 cup unsweetened applesauce (I used one snack pack)
  • Optional: Chocolate chips for topping

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
  • Mix all of the ingredients together in a blender, blend until mixture is smooth.
  • Pour mixture into prepared bread pan and bake for 40-50 minutes, or until a toothpick comes out clean.
  • Let cool and slice into 8 slices. Enjoy! Store any leftovers in fridge for up to one week, or in the freezer for up to one month.

*Use gluten free, if needed

***A note on pan size: I used a 8 1/2- by 4 1/2-inch loaf pan; if you only have a 9- by 5-inch pan, start checking for doneness 5 to 10 minutes earlier.
****Store banana bread at room temperature up to 2 days, in the refrigerator up to 5 days, or in the freezer up to 3 months.
*****For healthy banana muffins: Divide the batter between muffin cups then bake at 350 degrees F until a toothpick can be inserted and come out clean, 20 to 25 minutes.
