Ingredients

  • 1 box Kodiak Cakes Big Bear Brownies*
  • ½ cup or a 5.3 oz. container plain or vanilla Greek yogurt
  • 2 tablespoons olive oil melted butter or melted coconut oil
  • 2 tablespoons water
  • 2 eggs

    Instructions

    • Preheat oven to 350 degrees F. and spray a mini muffin baking pan with cooking spray.
    • Combine package contents and all other ingredients in a mixing bowl and hand stir until smooth.
    • Spoon batter into mini muffin cups, filling each one less than ½ full.
    • Bake for 20 minutes. Unless you have two muffin pans, you’ll have to do this in two batches for 21 mini brownie cups.
    • Immediately after removing brownies from the oven press a second muffin pan, a large spoon, ice cream scoop or simply use your thumbs to press the tops of brownies to form a cup-like brownie. (I found that using my fingers and thumbs worked best. It’s hot, but doable.)
    • Allow brownie cups to cool about 5 minutes and then fill them with your favorite filling options. Enjoy!

    Notes

    Please note, if you do use a different brownie mix, your ingredients may vary from the ones recommended in the recipe. Just follow the instructions on the package of your brownies!

    • Ice cream
    • Whipped cream
    • Sprinkles
    • Chocolate shavings
    • Peanut butter
    • Chocolate drizzle
    • Finely chopped nuts
    These brownies are pretty great without any toppings too!
