Super Simple Summer Quiche

Super healthy, super delicious quiche!

Ingredients

  • 3 eggs
  • 1 box of frozen spinach defrosted and drained
  • 3/4 cup mashed sweet potato canned or fresh
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley leaves

Instructions

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a medium bowl. Pour quiche mixture into almond crust, store bought crust or if crustless, into a 9 inch pie plate sprayed with cooking spray.
  • Bake quiche for 25-30 minutes.

Notes

Don't pass on the almond crust. It pairs perfectly with this quiche.
