Protein-packed honey mustard chicken salad is a fun twist on classic chicken salad! This easy chicken salad recipe is delicious served on a wrap, bread, apple slices or Sweet PotaTOASTS and it's always a hit!
2tablespoonsthinly sliced green onion or chives (optional)
1/4cupplain nonfat Greek Yogurt or sub mayo
2tablespoonsmayo or additional Greek yogurt
1tablespoonhoney
1 1/2teaspoonsDijon mustard
Salt and pepperto taste (I used 1/4 teaspoon salt and a dash of pepper)
For serving:
Sweet PotaTOASTS
Croissants or other Sandwich Rolls(add some lettuce for a sandwich)
Thinly sliced apples
Celery Sticks
Crackers
Tortilla wraps
Instructions
In a large bowl, add in the chopped chicken, dried cranberries, and thinly sliced green onion or chives. Stir to combine.
In a separate bowl, whisk together the Greek yogurt, mayo, and mustard. Whisk until smooth and season to taste with salt and pepper. Adjust quantities to your preference.
Add dressing to chicken mixture. Gently stir all of the ingredients together until combined. Taste and adjust for any additional salt/pepper.
Enjoy layered on Sweet PotaTOASTS, toasted bread, a croissant, tortilla wrap or with crackers.
