Ingredients

  • 2 Eggland's Best eggs
  • 1 cup chocolate chips*
  • 1/2 cup pure maple syrup
  • 1/2 cup mashed avocado about 1 avocado
  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F.
  • Grease a 9 to 10-inch cast iron skillet with cooking spray, coconut oil or olive oil.
  • Melt chocolate chips and set aside.
  • Whisk together eggs, syrup and mashed avocado. Stir in almond flour, baking soda and salt. Stir in melted chocolate chips.
  • Pour mixture into skillet and sprinkle with additional chocolate chips, if desired.
  • Bake for about 25 minutes and until toothpick inserted comes out clean.
  • Let cool for about 5-10 minutes before slicing.

Notes

*Use dairy-free, as needed. I like Enjoy Life chocolate chips.
