- 2 Eggland's Best eggs
- 1 cup chocolate chips*
- 1/2 cup pure maple syrup
- 1/2 cup mashed avocado about 1 avocado
- 2 cups almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Preheat oven to 350 degrees F.
Grease a 9 to 10-inch cast iron skillet with cooking spray, coconut oil or olive oil.
Melt chocolate chips and set aside.
Whisk together eggs, syrup and mashed avocado. Stir in almond flour, baking soda and salt. Stir in melted chocolate chips.
Pour mixture into skillet and sprinkle with additional chocolate chips, if desired.
Bake for about 25 minutes and until toothpick inserted comes out clean.
Let cool for about 5-10 minutes before slicing.
