Easy Cinnamon Pear Dutch Baby

Ingredients

  • 2 tablespoons coconut oil
  • 1 pear cored and sliced
  • 1 teaspoon ground cinnamon
  • 1 cup Kodiak Cake Flapjack and Waffle Mix or other favorite pancake mix
  • 1 cup water
  • Optional for garnish- powdered sugar fresh fruit, whipped cream, maple syrup

Instructions

  • Preheat oven to 400 degrees F. Heat coconut oil in a 9-inch skillet over medium-high heat. Add pear slices and cinnamon to skillet and frequently stir until pear slices are softened, about 3-5 minutes.
  • Meanwhile stir together Kodiak Cake Flapjack and Waffle Mix and water in a medium bowl.
  • Once pear slices are soft, make sure they are evenly distributed in the skillet and pour flapjack batter over pear slices. If needed, use the back of a spoon to spread the flapjack batter over the pear slices.
  • Immediately remove skillet from heat and place in the oven to bake at 400 degrees F. for about 20 minutes and until toothpick inserted comes out clean.
  • Cut into triangular-shaped slices, garnish with your favorite toppings and enjoy!

Notes

Make sure you use an oven-safe skillet such as cast iron. You start the pancake on the stove and finish in the oven.
