Optional toppings: chopped nutsnut or seed butter, fresh or dried fruit, a splash of almond milk
Instructions
Boil water in a medium pot and add oats. Reduce temperature to simmer oats for 5 minutes.
Meanwhile, prepare all other oatmeal ingredients.
After 5 minutes of cooking, add mashed banana, cinnamon, sweetener and egg. Whip with fork continuously for about 1 minute and then remove oats from heat, add vanilla and pour in bowl. It is important to whip egg continuously to keep it from scrambling.
Garnish oats with your favorite toppings. In the pictures, you can see that I topped my oats with chopped pecans, craisins and diced banana.

Notes
Make sure your banana is fairly ripe so that the mashed part "whips" in well.
