Chocolate Almond Butter Cookies

Only five ingredients to these scrumptious chocolate almond butter cookies!
  • 1 egg
  • 1/2 teaspoon salt
  • 1 cup almond butter I used homemade raw almond butter with cinnamon mixed in, use any nut butter you desire
  • 1/3 cup brown sugar or coconut sugar
  • 1/4 cup mini chocolate chips I use Enjoy Life Brand
  1. Preheat oven to 375 degrees F. Prepare baking sheet with a natural cooking spray or parchment paper.
  2. In a medium bowl, whisk egg and salt together, until egg is frothy.
  3. Add almond butter, sugar and chocolate chips to egg; stir to combine.
  4. Spoon out 1 tablespoon of dough to make 20 cookies, place 2 inches apart on baking sheet. Gently press the top of each cookie with a fork, twice to form a crisscross pattern.
  5. Bake at 375 degrees for 10 minutes, and until lightly browned. Allow cookies to cool for about 5 minutes on baking sheet before serving.
Recipe Notes

My cookies are completely chocolatey because my almond butter was warm when I added the chocolate chips and they melted. You can melt your chocolate chips prior to combining for this version.
