Instructions
Preheat oven to 350 degrees F. Line a large baking sheet or dish with aluminum foil and lightly coat in cooking spray.
Cut the center of the chicken breast (not all the way through) using a sharp knife or kitchen shears.
In a shallow bowl, combine flour with salt & pepper. In a second shallow bowl, lightly beat the egg. In a third shallow bowl, combine the panko with the basil, garlic powder and paprika.
Dredge chicken breasts in the flour to coat, shaking off any excess flour. Then dip in the egg and then coat with the breadcrumb mixture. Place on the prepared baking sheet and repeat with the remaining chicken breast.
Stuff each chicken breast with one cheese stick and about 1/4 cup broccoli florets.
Bake in preheated oven for about 30 minutes (time will depend on how thick your chicken breasts are) and until chicken is cooked through.
Notes
Don't skip the breadcrumbs! They add the perfect layer of crunch.
