A super healthy quinoa muffin recipe, that’s also really scrumptious. There’s no oil, butter or sugar in this recipe; except for the chocolate chips, which add a lovely sweetness to these protein packed muffins.
2cupsold fashioned rolled oatsuse gluten-free as needed
1teaspoonbaking powder
1/4teaspoonsalt
2-3packetsSteviaoptional
2egg whites or 1/3 cup liquid egg whites or 1 large egg
1cupalmond milkany milk works
2teaspoonsvanilla extract
1/2cupmini chocolate chips or a combination of currantssmall raisins and mini chocolate chips
Instructions
Preheat oven to 350º F. Line a muffin tin with paper liners or spray with cooking spray.
In a medium to large bowl, whisk together quinoa, oats, baking powder, salt and Stevia.
Stir in egg whites, milk and vanilla. Mix in chocolate chips. Divide among 10 muffin cups. Fill muffin cups full, as these muffins will not rise.
Bake until a toothpick inserted in the center of a muffin comes out clean, about 30-35 minutes. Cool muffins in pan for 10 minutes. For easy removal from muffin cups, slide a butter knife along the side of the cup. Enjoy!
