Chocolate Chip Quinoa Oatmeal Muffins

A super healthy quinoa muffin recipe, that’s also really scrumptious. There’s no oil, butter or sugar in this recipe; except for the chocolate chips, which add a lovely sweetness to these protein packed muffins.

Ingredients

  • 1 cup cooked quinoa cooled
  • 2 cups old fashioned rolled oats use gluten-free as needed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2-3 packets Stevia optional
  • 2 egg whites or 1/3 cup liquid egg whites or 1 large egg
  • 1 cup almond milk any milk works
  • 2 teaspoons vanilla extract
  • 1/2 cup mini chocolate chips or a combination of currants small raisins and mini chocolate chips

Instructions

  • Preheat oven to 350º F. Line a muffin tin with paper liners or spray with cooking spray.
  • In a medium to large bowl, whisk together quinoa, oats, baking powder, salt and Stevia.
  • Stir in egg whites, milk and vanilla. Mix in chocolate chips. Divide among 10 muffin cups. Fill muffin cups full, as these muffins will not rise.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, about 30-35 minutes. Cool muffins in pan for 10 minutes. For easy removal from muffin cups, slide a butter knife along the side of the cup. Enjoy!

Notes

Try dried fruit in place of the chocolate chips!
