Ingredients

Base Ingredients:

  • 2 large eggs cage-free and organic are best
  • 1 ripe banana the riper, the more sweet
  • 1/8 teaspoon baking powder
  • 1 tablespoon coconut flour

Optional Additions:

  • 1 packet stevia
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons shredded coconut
  • 1 tablespoon PB2 or nut butter
  • 2 tablespoons mini chocolate chips
  • 1/4 cup blueberries or raspberries
  • 2 tablespoons dried cranberries or chopped nuts

Instructions

  • Spray waffle iron with a natural cooking spray and allow it to heat up.
  • While your waffle iron is heating; beat eggs together in a shallow bowl. Mash banana into egg mixture, well. Stir in baking powder and coconut flour and any other preferred add-ins.
  • I have a large waffle iron to make Belgium waffles and the amount of batter was perfect for one large waffle.
  • Top with additional favorites, such as; maple syrup, coconut and fresh fruit.

Notes

The waffle was actually way easier and quicker than the pancakes. There’s no flipping involved or guessing when they’re finished cooking.
