Orange Pistachio Truffles

I would have never guessed orange, pistachios and dates would make such a lovely flavor combination. A must try healthy snack ball!

Ingredients

  • 4 tablespoons unsweetened shredded coconut optional, for rolling truffles in
  • 1/2 cup chopped Medjool dates pitted (about 6 large dates)
  • 6 tablespoons shelled pistachios I used a salted roasted variety.
  • 1/4 cup chopped dried apricots about 6 apricots
  • 3 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon allspice

Instructions

  • Place shredded coconut in a shallow bowl and set aside.
  • Pulse dates, pistachios, apricots, juice, zest and seasonings in a food processor until nuts are ground and the mixture begins to hold together.
  • Form mixture into 11 small balls.
  • Roll each ball in shredded coconut and place in a container to refrigerate until firm, about 1 hour.

Notes

Store in the fridge, freezer or at room temperature in a covered container. I like these straight out of the fridge.
