Ingredients

  • 1 cup well packed shredded carrots or 2 cups baby carrots
  • 15 oz chickpeas (garbanzo beans), rinsed and drained
  • ½ cup lemon juice about one large lemons
  • ¼ cup water
  • ¼ cup tahini sesame seed butter
  • 2 cloves garlic
  • ½ teaspoon salt plus more to taste
  • ½ teaspoon cumin

Instructions

  • Place all ingredients in a food processor or high-speed blender. Blend until smooth, about 2 minutes.
  • Transfer hummus to serving bowl, serve raw veggies, crackers, chips and/or mini pitas. Makes a great spread for wraps and sandwiches too!
