Thick plump cheese tortellini with sweet dried figs and crunchy walnuts creates a party in your mouth!

Ingredients

  • 5 oz. organic baby lettuce mix or 5 large handfuls
  • 12 oz. package Barilla Three Cheese All Natural Tortellini
  • 1/2 cup walnut pieces
  • 1/2 cup dried mission figs sliced
  • 1 can quartered artichoke hearts, drained 14.6 oz.
  • 2-4 tablespoons extra virgin olive oil
  • feta or goat cheese for topping salads optional

Instructions

  • Cook tortellini according to package instructions. Allow tortellini to cool for several minutes.
  • Combine all ingredients in a large serving bowl and toss to combine. Enjoy!

Notes

It doesn't matter if you are using fresh (refrigerated) or dried tortellini here, just make sure and cook to al dente per the package directions.
