Ingredients

  • 1 1/2 lbs boneless skinless chicken breast
  • 1 1/2 tablespoons taco seasoning
  • 1 jalapeno seeded and minced
  • 1 yellow onion diced
  • 20 oz RO*TEL 2 cans
  • salt to taste about 1 teaspoon
  • For serving: sandwich bread, lettuce leaves, tortillas

Instructions

  • Sprinkle and rub taco seasoning all over chicken breasts, then place chicken breasts at the bottom of the slow cooker.
  • Scatter onion and jalapeno over chicken breasts. Pour RO*TEL over the top, place lid on slow cooker and cook on low for about 3 1/2 to 4 hours.
  • After chicken is cooked through, remove from slow cooker and chop up or shred. Place chicken back in slow cooker and stir to combine. Season with salt to taste.
  • To serve, scoop out chicken and place on bread, lettuce leaves or tortilla and enjoy!

Notes

Feel free to also serve this chicken over rice or in tacos.
