Cowboy Caviar Sweet Potato Bites

Sweet Potato Bites topped with my favorite guacamole and a spoonful of cowboy caviar- oh my goodness, you guys are going to absolutely love this fun and festive appetizer!
Ingredients
  • 2 medium sweet potatoes scrubbed and sliced into ¼-inch thick pieces
  • For the guacamole
  • 3 ripe Hass avocados
  • ½ jalapeño minced and seeded
  • ¼ red onion finely chopped (about ¼ cup)
  • ¼ cup fresh cilantro finely chopped
  • juice from ½ lime 2-3 teaspoons
  • 1- 1½ teaspoons salt or to taste (start with 1 teaspoon and add more as needed)
  • For the cowboy caviar
  • 1 14 oz. can black-eyed peas, drained
  • 1 15 oz. can white hominy, drained (corn can be used instead)
  • 1 green or red bell pepper finely chopped
  • 2 medium tomatoes chopped and seeded
  • 1 cup finely chopped onion
  • 2 cloves garlic minced
  • ½ cup fresh cilantro chopped
  • 1-2 fresh jalapenos seeded or not (I used 1 seeded jalapeno)
  • 1 cup Pace® Salsa
  • 1 teaspoon salt plus more to taste as needed
  • For serving
  • Fresh cilantro for garnish optional
Instructions
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spread the sweet potato slices out in a single layer. Spray the tops with cooking spray and sprinkle sea salt or Himalayan salt over the tops. Bake for about 15 minutes or until tender.
  2. For the guacamole
  3. Choose the right avocado. It should feel squishy yet firm (like the palm of your hand), and be a nice dark green color on the inside.
  4. Cut the avocado in half (vertically) and remove the pit by stabbing carefully with your knife. Use a paper towel or dish towel (so the pit is not slippery in your hands) to remove the pit from the knife.
  5. Scoop the avocados out of peel and place on a plate or in a medium bowl.
  6. Use a fork or potato masher to mash until a smooth consistency is achieved. Stir in remaining ingredients.
  7. Take a taste or a few tastes and adjust seasoning as needed for yumminess!

  8. For the cowboy caviar
  9. Drain, chop, mince, seed all ingredients and then combine everything in a large bowl.

  10. For sweet potato bites
  11. Once sweet potato rounds have cooled, top and spread a dollop of guacamole over the top of each one. Then add a tablespoon of cowboy caviar on top of the guacamole. Garnish with a sprig of cilantro and serve immediately or store in the fridge for several hours before it's party time.
