Ingredients

  • 3 cups water
  • 1 1/2 cup old-fashioned rolled oats gluten-free as needed
  • 1 cup grated zucchini about 1 large zucchini
  • 1 scoop chocolate protein powder* about 28 grams
  • Optional toppings: fresh blueberries all-natural peanut or almond butter and shredded unsweetened coconut

Instructions

  • Bring water to a boil in a medium saucepan over medium-high heat.
  • Add oats; mix well. Reduce heat to low. Gently boil, stirring occasionally, for about 4 minutes.
  • Meanwhile, grate one large zucchini. Don't worry about adding the excess water from zucchini. Your oats will not be too watery.
  • Stir in zucchini and continue to cook for about 3-5 more minutes and until oats are thick and soft. Remove from heat and stir in protein powder. Top with your favorite toppings. I enjoyed an addition of 2 tsps. peanut butter, a handful of fresh blueberries and unsweetened shredded coconut.
