1 1/2cupold-fashioned rolled oatsgluten-free as needed
1cupgrated zucchiniabout 1 large zucchini
1scoopchocolate protein powder*about 28 grams
Optional toppings: fresh blueberriesall-natural peanut or almond butter and shredded unsweetened coconut
Instructions
Bring water to a boil in a medium saucepan over medium-high heat.
Add oats; mix well. Reduce heat to low. Gently boil, stirring occasionally, for about 4 minutes.
Meanwhile, grate one large zucchini. Don't worry about adding the excess water from zucchini. Your oats will not be too watery.
Stir in zucchini and continue to cook for about 3-5 more minutes and until oats are thick and soft. Remove from heat and stir in protein powder. Top with your favorite toppings. I enjoyed an addition of 2 tsps. peanut butter, a handful of fresh blueberries and unsweetened shredded coconut.
