Three Ingredient Oat Pancakes for One- the perfect quick, easy, satisfying breakfast for one that's super scrumptious too!
Ingredients
  • 1/2 very ripe banana mashed
  • 1/3 cup quick oats or old-fashioned oats pulsed a few times in a food processor
  • 1/3 cup egg whites*
  • Optional for tastier pancakes: 1/2 teaspoon cinnamon and 1 packet stevia
  • Optional for serving: maple syrup and fresh fruit
Instructions
  1. Combine mashed banana with oats and egg whites. Add cinnamon and stevia, if desired. Let mixture sit for about 3-5 minutes. Heat a non-stick large or small skillet or griddle.** Spray with cooking spray as needed.
  2. Spoon or pour batter onto skillet or griddle. Allow pancakes to cook about 5-8 minutes on the first side and then 3-5 minutes on the second side and until both sides are golden brown.
  3. Remove pancakes to plate and serve with maple syrup and fresh fruit, if desired. Enjoy!
Recipe Notes

*I use liquid egg whites from a carton.
**I use an 1/8 cup to spoon batter onto griddle to make 6 very small pancakes. Alternatively, use a small skillet to pour all batter into and make one very large pancake.
