Ingredients

  • 2 cups old fashioned rolled oats*
  • 1/3 cup sweetener that measures like sugar**
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 6 ounces strawberries, sliced
  • 1/4 cup mini chocolate chips***
  • 1 1/2 cups milk, dairy or non-dairy
  • 1/2 cup orange juice or additional milk
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 ripe banana, peeled and cut into 1/2-inch slices

Instructions

  • Heat oven to 375 degrees F. Generously spray the inside of a 2-quart baking dish with cooking spray and set aside.
  • In a large bowl, mix together the oats, sweetener, baking powder, cinnamon, salt, half the strawberries, and half the chocolate chips. Add to prepared baking dish. Scatter the remaining strawberries, chocolate, and the banana on top of the oats.
  • In another large bowl, whisk together the milk, egg, and vanilla extract, then pour over the oats and fruit. Gently shake the baking dish to help the milk mixture cover the oats throughout the dish.
  • Bake oatmeal until the top is golden brown and the milk mixture has set, about 35 minutes.

Notes

*Use gluten-free as needed. **Baking stevia or coconut sugar work well. You can always use regular or brown sugar, if preferred. Another idea is to use about 3-4 packets of stevia. ***I like Lily's or Enjoy Life brand dairy free chocolate chips.
