Southwestern Chicken Baked Hummus Dip

Ingredients

  • 3 cups shredded rotisserie chicken or other type of cooked shredded chicken
  • 2 8-10 ounce tubs hummus*
  • 1/2 cup crumbled feta or cotija cheese
  • Optional toppings: chopped scallions, diced tomato, chopped cilantro

For Serving:

  • Cucumber slices
  • Carrot spears
  • Tortilla chips
  • Plantain chips
  • Crackers

Instructions

  • Pre-heat oven to 350ºF.
  • In a large bowl mix chicken and hummus.
  • Pour mixture and spread evenly into an 8x8 baking dish. Sprinkle dish with cheese.
  • Bake for about 15 minutes.
  • Top with garnishes and serve warm with desired veggies, chips and/or crackers.

Notes

*Any flavor will work. I like using a jalapeño or spicy version for this recipe. **Dish can be prepped ahead of time and baked right before guests arrive.
