Blueberry Pie Overnight Oatmeal

Ingredients

  • 1/2 cup fresh or frozen organic blueberries + more for serving
  • 1/2 cup rolled oats gluten-free, if needed
  • 1 cup unsweetened almond milk + more for serving
  • 1 tablespoon chia seeds

Optional Additions

  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 packets stevia

Instructions

  • Cook blueberries, with about 1/4 cup water, in a small saucepan over medium heat; until most blueberries have popped and released juices.
  • In a mason jar or other similar container, combine cooked blueberries, oats, almond milk, chia seeds and any other optional ingredients.
  • Cover and refrigerate at least 4 hours and up to 3 days. Serve with toppings as desired. If you prefer your oatmeal warm, simply microwave the mixture for about a minute before enjoying.
