2cupscubed or shredded cooked chicken breastrotisserie chicken works
3green onionschopped
1cuphalved and thinly sliced red onions
2tablespoonsSoy Vay Veri Veri Teriyaki Marinade + more to taste
1heart of romaine lettuce or 1 head Boston bibb lettuce
Garnish:
2-4tablespoonschopped peanuts
slivered purple cabbage and/or carrots
red pepper flakes
sesame seeds
Instructions
Heat olive oil in a large skillet over medium heat. Add diced bell pepper and cook for 2 minutes, or until tender. Add chicken and green onions and continue to cook for 2 minutes.
Remove from heat and stir in red onions and Soy Vay Veri Veri Teriyaki Marinade.
To serve, spoon about 1/4 cup of the filling into a lettuce leaf. Add garnish and enjoy!
