Ingredients

  • 5 3 ounce packages Blue Harbor tuna
  • 1/3 cup red seedless grapes, halved
  • zest of about 1/2 a lemon, about 1 teaspoon zest
  • the juice of 1 lemon, about 2 tablespoons
  • 1/2 cup homemade or clean ingredient mayo (Greek yogurt can also be used)
  • 1/3 cup coarsley chopped walnuts or pecans
  • 1/2 cup diced celery, about 2 ribs
  • 1 medium apple, cubed (about 1 1/2 cups)
  • 1 teaspoon kosher salt or to taste
  • 1/4 teaspoon garlic powder
  • black pepper, to taste
  • pitas for serving*

Instructions

  • Combine all ingredients in a large bowl, toss to combine.
  • Refrigerate for at least for 1 hour before serving.

Notes

*Alternative serving suggestions: stuff a pitted avocado with tuna salad or serve on rice cakes, over lettuce greens or with rice crackers
Salad keeps well for about 5 days, and its even better the day after you make it!
