A new way to satisfy my peanut butter cravings. In ice cream. It’s the best of both worlds – super creamy and slightly sweet.

Ingredients

  • 1 scoop of your favorite protein powder
  • 1 cup of unsweetened vanilla cashew milk or dairy of your preference
  • 1 teaspoon xanthan gum*
  • 2 teaspoons all natural peanut butter (or other favorite nut/seed butter) ~12g
  • 1 cup of ice
  • Stevia or other sweetener optional

Instructions

  • Combine ingredients in blender, beginning with the ice on the bottom.
  • Blend until smooth. It should the texture similar to soft serve ice cream or a little thicker.
  • Pour out into a bowl and top with your favorite toppings!

Notes

*This is optional, but necessary to obtain the thickness that mimics that of "real" ice cream.
