Make these Hawaiian Meatball Meal Prep Bowls ahead of time and you’ll have FOUR work lunches ready and waiting!

Ingredients

  • 12 Cooked Perfect Meatballs
  • 1-2 cups cooked rice
  • 1 fresh pineapple , diced (about 2 cups)
  • ¼-1/2 cup diced red onion
  • 10-12 ounces zucchini noodles (about 4 zucchinis noodled)*
  • Optional: Sriracha sauce and fresh cilantro for topping

Instructions

  • Divide all ingredients evenly into 4 bowls or storage containers.
  • Seal each container with lids and place in the fridge. When ready to eat- remove lid and heat in microwave for about 1 minute and 40 seconds or until heated through. Enjoy!

Notes

*There is no need to pre-cook zucchini noodles. They will cook when heating up your lunch.
