Ingredients

Watermelon Tomato Avocado Salsa

  • 1 large avocado peeled, seeded and diced
  • 1 1/2 cups tomatoes diced
  • 1 1/2 cups watermelon diced
  • 1/4 red onion diced
  • 1 small jalapeno seeded and diced
  • 1/4 cup fresh cilantro chopped

Salmon

  • 1 tablespoon avocado or olive oil
  • 4 6-oz. wild Alaska salmon fillets about 1 in. thick
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

Watermelon Tomato Avocado Salsa

  • Combine all ingredients in a medium to large serving bowl.

Salmon

  • Preheat oven to 500 degrees F. Line a rimmed baking sheet with foil.
  • Heat 1 tablespoon oil in a large skillet over high heat. Sprinkle salmon with salt and pepper.
  • Add fillets to pan (flesh side down) and cook for 4 mins (on one side).
  • Transfer fillets to baking sheet seared side up and bake at 500 degrees F. for 4 mins or until desired level of doneness.
  • Plate cooked fish on a bed of greens and top with Watermelon Tomato Avocado Salsa. Enjoy!

Notes

I love serving this on salad but it's also great with rice.
