The best-ever fluffy yogurt protein waffles require just 4 ingredients, 10 minutes and 1 bowl. They are thick, soft, perfectly sweet, and buttery! Made naturally gluten-free, so just about everyone can enjoy!
1scoop (about 21-24 grams)protein powderuse gluten-free as needed
1/4cupegg whites from a carton
2tablespoonswater + 1-2 tablespoons moreas needed for consistency
1/4cupyogurt (any flavor!)
fruit, nut/seed butter, maple syrup and/or powdered sugarfor serving
Instructions
Spray waffle iron with nonstick cooking spray or grease with coconut oil and preheat.
In a small bowl, stir protein powder egg whites, Activia yogurt and water until mixture is fully combined. Add additional water if needed to gain preferred consistency. You will want the batter to be thick, but able to pour onto waffle iron.
Pour batter onto the waffle iron. My waffle iron is very large and this recipe will make one large waffle. Depending on the size of your waffle iron, you may need to make in batches.
Cook on high and according to waffle iron instructions. I like to let my waffle cook a couple extra minutes after the waffle iron indicates the waffle is cooked. This gives the waffle an extra crisp outer texture.
Serve waffle immediately with desired toppings.
Try making up a few batches on Sunday, to have a quick breakfast ready to go throughout the week. Waffles freeze well, up to 2 months. Reheat in toaster or microwave.
