Good morning, friends! It’s that day again… where I share with you, what I’ve been chomping on lately. Head over to Jenn’s blog for more What I Ate Wednesday fun! These are my delicious eats from Saturday. And enough of the small talk…. let’s get this party started.


I bet you could take one guess what I started my day with….. you got it….. Chocolate Glazed Donut flavored coffee. It’s definitely a favorite of mine!

When it was time for breakfast, I decided on a figgy green smoothie {more on this smoothie later in the week}. I had never added figs to my green smoothie before and it was a great decision!

After breakfast, I headed to the gym for a run and Body Pump. By the time I got back home, it was time for lunch. I went with a huge beast of a chicken salad. I’ve been incorporating quite a bit more chicken into my meals for additional protein. I know it’s totally doable to eat a high-protein diet without eating meat, but I find it much easier to get an adequate amount of protein for the day by throwing a chicken breast into the mix. I added prepackaged grilled chicken that I found at Kroger. It’s organic, no antibiotics, no nitrates and no artificial preservatives are used. The other fixins were spinach, broccoli, cucumber, avocado, tomatoes, cottage cheese and pineapple salsa. Yum!

One of the snacks that I enjoyed throughout the day was Trader Joe’s Tomato and Basil Hummus. Why did I wait so long to give this hummus a try? So good!

Dinner was really easy to throw together and pretty tasty too! I was experimenting with the chicken…. I’m working on creating a recipe with Weight Watcher’s String Cheese for a sponsored post coming up. The recipe has to be approved before the post; which is a first. I’m going to make a few additions to the stuffed chicken recipe, but it was a winner. The lentils are a mix from Trader Joe’s; which I’ll post more on later. I’m planning a Trader Joe’s food finds post soon…. they’ve had so many great products lately. What am I talking about?…. they always have great products!

For dessert, I couldn’t pass up one of my Chocolate Chip Quinoa Oatmeal Muffins with a cup of coffee… what a perfect combo!
