Hey, there! Since I missed you guys last week with What I Ate Wednesday, I decided to compile some recent eats and share what I’ve been eating lately.

Minus a few ads that will eventually go back up, I think the new blog design is complete. I hope you guys are enjoying the new look… I sure am! After staring at the bright pink sidebars, the blog had previously; I’m really happy with the cleaner lighter look.

My mornings pretty much never differ… there is always a cup of coffee nearby. Lately, I’ve been sipping on Texas Pecan k-cups. If you live near an HEB or Central Market (probably only available in Texas) you’ve got to give this flavor a try.

For breakfast, I’ve been eating lots of different varieties of overnight oats. Did you guys catch Lee’s week of overnight oat creations? So far, I’ve tried her PB & J Oats, Choc-Covered Strawberry Oats and PB Chocolate Chip Cookie Dough Oats. They’ve all been fab!

Yesterday, I turned my avocado tomato Flatout into breakfast by adding an egg omelet to the wrap. It was delish and very filling! I’m pretty sure you can guess what my lunches have consisted of lately… EGGS! I’ve been eating egg salads like they’re going out of style. The three that are in my meal rotation are Tuna Avocado Egg Salad, Skinny Egg Salad and my newest favorite Curried Egg Salad.

Curried Egg Salad- the traditional egg salad gets a kick of flavor from one of my favorite antioxidant-rich seasonings.

I changed things up in the snack department, recently, and brought back rice cakes. I hadn’t had a rice cake in forever, but then I made taco-style rice cakes for Hannah’s post. They turned out so yummy, and now I’ve been craving them daily. Check out Hannah’s post for other healthy rice cake ideas!

A few nights ago, I made this breakfast casserole for brinner (breakfast for dinner). It’s a mixture of eggs, pancake mix, turkey sausage, kale and tomatoes. It was a winner and I’ll be sharing soon.

The strawberries I bought this past weekend are sooooo sweet and wonderful. Before bed, last night, I had a yogurt treat with strawberries and a little granola… totally hit the spot!
