Well ya’ll, I’m half-way through my first work week post holidays. It hasn’t been easy or fun, but we’re getten’ through…kinda sounds like words to a country song. 😉

Here’s What I Ate Wednesday Tuesday- a day in the life style….. Check out Jenn @peasandcrayons.com for more WIAW shenanigans!


4:30- Alarm goes off.

4:50- After a shower, I get the day started with a cup of donut house coffee, thanks to my Keurig.

5:50- I’m ready for the day, now time for some oats to warm-up. It has been forever since I’ve made steel-cut oats, but I was craving them this morning. They take about 25-30 mins, but I just let them simmer while I’m getting ready for the day. After the oats had cooked about 15 minutes, I stirred in 1/2 cup pumpkin puree and 1 tbsp chia seeds and added about 1/2 cup of cranberries {I’ve got to get rid of these cranberries!}. After cooking was complete, I let my pot sit for a couple of minutes. Believe me, you don’t want to pour the hot oats straight into a plastic jar. :/ I added two stevia packets and used an almost empty jar of Trader Joe’s crunchy PB, topped off with shredded coconut. Definitely, hit the spot on this chilly morning.

6:50- I enjoyed another cup of donut house coffee on the way to work.

9:20- A very busy day at work today!! But I did manage to get in a little snack of cottage cheese, blackberries and pomegranate arils with a clementine on the side {of course}.

12:00- My favorite part of the workday….lunch time….and it was a good one today. Leftover Mexican Lasagna and a salad….you guys seriously need to try this lasagna!

3:30- Geez….I’m still BUSY, but I’ve always got time for a sliced gala apple and the last of my homemade coconut almond butter. I’m very sad to see that go, but I bought some raw peanuts this weekend, so that’s what I’ll be experimenting with next.

6:30- It’s a late gymnastics night for us tonight and rather than go grab something, I brought my favorite premade salad that Trader Joe’s makes. I always add some of my own spinach to it, to give it a little more oomph.

9:00- Quick little bedtime snack to tide me over through the night of Chobani yogurt, blackberries, and Kashi Go Lean was a great way to wrap up the night.

Now it’s time to get everything ready to do all again tomorrow! I’m going to try to be in bed by 10:30….we’ll see…..
