Vanilla Raspberry Overnight Oatmeal
Did you know people who eat oatmeal for breakfast feel fuller longer? I don’t know about you, but I hate being hangry (when hunger turns into anger)! Vanilla Raspberry Overnight Oatmeal to the rescue!
The warmer summer weather has officially arrived, here in Texas, so sitting down to a steaming bowl of oats can make for a sweaty morning. Try putting on makeup with beads of sweat across your forehead… it ain’t happenin’! It’s definitely time to transition from cooked oatmeal to cool creamy overnight oatmeal.
If you haven’t tried overnight oatmeal straight out of the fridge, you’re in for a real treat. And I have to say this gorgeous bowl of Vanilla Raspberry Overnight Oatmeal is just as incredibly tasty as it is beautiful. Everything looks better in pink!
I use 1915 Bolthouse Farms™ to increase the protein in my bowl of oats and make them extra flavorful. Because the oats are soaked over a long period of time, you’re able to absorb maximum nutrient benefits from the ingredients.
1915 beverages are the perfect compliment to this breakfast recipe because they’re made with simple ingredients and are ORGANIC & NON-GMO. They contain a whopping 12 grams of plant-based protein, consisting of non-dairy, vegan and gluten-free ingredients. I used the vanilla for this particular recipe, but feel free to get creative with your overnight oatmeal because 1915 protein beverages also come in coffee and chocolate flavors. All are dairy-free (vegan), made from pea protein and alternative milk (almond milk and soy milk).
Landen and Alexis have also been enjoying these in their smoothies. We’re down to our last few bottles, so the fight is on! 🙂 For their smoothies, they use about 1 cup of the 1915 beverage, 1/2 cup Greek yogurt and 1-2 cups frozen fruit. Another quick, easy, terrific summer breakfast or snack idea! It’s also delicious and refreshing to just drink without any other ingredients mixed in.
So yes, this raspberry bowl of loveliness is satisfying, refreshing, easy on the eyes and flavorful, but it’s also so darn easy. 5 simple ingredients, 5 minutes prep, no fanciness- throw the ingredients in a mason jar or other container with a lid, place it in the fridge and let the flavors meld and the oats get soft and creamy while you sleep. In the morning, toss in your favorite oatmeal toppings, replace the lid and head out the door… or scarf down immediately.
How to make Vanilla Raspberry Overnight Oatmeal:
Let’s take a look at just how fabulously easy this morning meal is to create.
Simply blend the raspberries and the 1915 beverage. If you don’t happen to have raspberries on hand, feel free to use another berry variety. Blueberries, cherries and/or strawberries would all be great choices!
Next, transfer liquid mixture to a jar or other type of container with a lid and combine with oats and chia seeds. Cover and place in the fridge for at least 4 hours or overnight.
In the morning or whenever you’re ready to eat, pour into a bowl (or leave in the jar) and top with all of your favorite toppings. I topped my overnight oatmeal with additional raspberries, blueberries, strawberries, cherries, pom seeds, hemp seeds and chopped pistachios. Wow- that’s a lot of yumminess!
If you feel stuck in a rut when it comes to a healthy on-the-go breakfast, you’re going to adore this Vanilla Raspberry Overnight Oatmeal. It’s:

- 1 1/2 cups liquid I use 1915 vanilla protein beverage*
- 1 cup fresh organic raspberries or other berry
- 3/4 cup rolled oats use certified gluten-free oats as needed
- 1 tablespoon chia seeds optional, but recommended for thicker oatmeal
- Optional toppings: fresh fruit chopped nuts, seeds, cacao nibs, nut or seed butter and/or shredded coconut.
Combine liquid and raspberries in a blender.
Stir oats and raspberry/liquid mix together in a mason jar or other container with a lid.**
Place oats in the fridge for at least 4 hours or overnight.
When you're ready to eat your oats, remove from the fridge and add a splash of almond milk or 1915 vanilla protein beverage (if desired), plus any other toppings that you love. Enjoy!
Overnight oatmeal will keep well in the fridge for up to a week, so feel free to meal prep for the entire week.
*If you're not using Bolthouse, add 1 teaspoon pure vanilla extract and 1 Stevia packet or 1 tablespoon honey or maple syrup.
**If you happen to have an almost empty jar of peanut or almond butter, this makes a great place to mix up your overnight oatmeal, plus it adds a nice nut butter flavor to your oats.
