Tuna Avocado Egg Salad
In this Tuna Avocado Egg Salad, your everyday tuna salad gets jazzed up with the addition of avocado, eggs and Greek yogurt! The creamy texture of heart-healthy avocado is a wonderful replacement for mayo found in the traditional tuna salad. Eggs add even more flavor, nutrition and protein to this lovely tuna avocado egg salad.
I promise this blog isn’t all about tuna and egg salad recipes. I’ve shared quite a few in the past couple of weeks, but the truth is, they’re just so darn easy… and REALLY tasty too! Throwing several of my favorite ingredients together and coming up with a tasty meal- super quick and super simple- makes me a very happy girl.
I bring my own lunch to work everyday, without fail. To keep things interesting, I like experimenting with different ingredients to make various high protein nutritious salads. You can serve the tuna avocado egg salad on a Flatout or tortilla (wrap-style), as a topping on spinach leaves, on bread (sandwich-style) or with crackers.
Avocado Egg Tuna Salad
- 2 can tuna, 5 oz each
- 6 hard-boiled eggs, mashed or diced
- 2 avocados, mashed
- 1/4 cup nonfat plain Greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon garlic salt
- 1/2 teaspoon smoked or regular paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Combine all ingredients in a medium-large mixing bowl. I like to mash everything together with my hands.
- Serve on crackers, bread or in a wrap. Enjoy!
