Wow… that’s quite a title, but I just can’t leave any ingredient out. They all come together to make the perfect flavor combination. The combination was created purely by accident, though. Don’t you just love when that happens?

After a day of Christmas shopping and running various errands, I wanted something quick and easy for dinner. Safeway grocery store was my last stop of the day. I ran in and grabbed a bag of Three Cheese All Natural Barilla Tortellini. I really wasn’t sure what type of meal I was going to create with the tortellini. I was thinking about combining the tortellini with a simple meat sauce or using the tortellini to make a thick and hearty soup, but I really wanted something on the lighter side. You guys know how much I love my salads and I also had some dried figs that needed to be put to good use.

Tortellini, Artichoke, Fig and Walnut Salad
Thick plump cheese tortellini with sweet dried figs and crunchy walnuts creates a party in your mouth!
Ingredients
  • 5 oz. or 5 large handfuls organic baby lettuce mix
  • 12 oz. package Barilla Three Cheese All Natural Tortellini
  • 1/2 cup walnut pieces
  • 1/2 cup dried mission figs sliced
  • 1 14.6 oz. can quartered artichoke hearts, drained
  • 2-4 tablespoons extra virgin olive oil
  • feta or goat cheese for topping salads optional
Instructions
  1. Cook tortellini according to package instructions. Allow tortellini to cool for several minutes.
  2. Combine all ingredients in a large serving bowl and toss to combine. Enjoy!

I used the ingredients that I had in my pantry to come up with a vegetarian, light and VERY flavorful meal. The three cheese Barilla tortellini is plump and cheesy and compliments the crunchy walnuts and chewy sweet figs…. seriously a party in your mouth! I love meals that offer a variety of textures and flavors. This makes a great choice on busy weeknights because it only takes about 15-20 minutes to cook and throw together. I was also thinking, this would make a perfect day after Christmas meal, when you want something lighter and easy.
