Hope everyone’s celebration of the new year was safe and fun!Welcome to a very exciting edition of What I Ate Wednesday Tuesday… the first of 2013! Thanks Jenn, as always, for hosting!

I had an okay New Year’s Day. Just okay because I spent the ENTIRE day organizing, cleaning and decluttering; which is never all that much fun. However, it’s a good thing because that is an item on my goal list for the new year- to declutter and organize my house. I’m moving quickly because I go back to work on the 7th and I know it will be much easier if I can get a large chunk of this completed before then. Brad helped out quite a bit, which was awesome.

I started my morning a little later than normal, around 7:30. Haha…I know that’s pretty early for some of you! I barely stayed up to ring in the new year, so I needed my beauty sleep. 😉 I enjoyed a cup of Donut House coffee while blog reading.

After my coffee, it was time to cook up some breakfast and I was craving the zucchini bread that I made on New Year’s Eve {recipe coming tomorrow}, so I knew my breakfast would have to revolve around that. I ended up with an egg, two egg whites, blackberries, blueberries, clementines, and two slices of zucchini bread; one topped with crunchy PB and one topped with TJ’s Cranberry Apple Butter. Totally hit the spot!

Throughout my day of cleaning, I snacked on some nuts and a few M&Ms and then stopped briefly for a few blackberries and cottage cheese. I didn’t think blackberries were in season, but I’ll tell you the past few times I’ve been to TJ’s and bought them, they have been sooooo good.

I took a break for lunch and had some leftover Spicy Mexican Black-eyed Pea Casserole with a salad, more clementines, and some leftover roasted green beans. I topped my salad with cherry tomatoes, broccoli, and my favorite dressing from TJ’s- the Reduced Fat Cilantro Dressing. And then it was back to work for me!

Dinner was so awesome and totally made the day of cleaning and organizing well worth it. Brad cooked while I worked. Very sweet of him….I think he just wanted to keep me cleaning. 😉 It was taco night and the kids were happy about it…and so was I. I had a huge taco on a Flat-out, complete with all Trader Joe’s ingredients- refried black beans, lean ground beef with taco seasoning, roasted corn, fajita veggies (both in the frozen food section), black olives and a little avocado hummus. On the side I had some Food Should Taste Good multigrain chips and Chunky Guacamole (from TJ’s). What is that chip doing on my taco?

After dinner, I had my nightly cup of coffee while writing up this blog post and then a little later enjoyed a little bit of TJ’s frozen Greek yogurt with blueberries and a little brownie bite crumbled in.

Madelyn’s off to horse-riding camp all day {she’s just slightly excited}. I have a dentist appointment and then I hope to get in a run and a bit more decluttering done around the house. Have a great day!
